SolOlio is a monocultivar of Verdello, a very rare native cultivar of Messina, even in the Sicilian territory. As all our production is produced by our farms in certified organic farming and boasts the "Nebrodi Sicily" mark of excellence.
The olives are harvested by hand early, still green, so as to obtain a higher organoleptic quality with a lower quantitative yield. The oil is then cold pressed in a certified organic mill to avoid alterations in the qualitative and organoleptic characteristics of the fruit.
The oil is characterised by very low acidity and excellent longevity over time.
It can be classified as a light/medium fruity, persistent and of very high quality.
